Film - peak shaving in school kitchens

In this film, we tell you more about why peak shaving is important and how the cooperation between STUNS Energi, Måltidsservice and Skolfastigheter shows an example of how it is possible to reduce power peaks through behavioral changes and changed operation modes.

The film was shown during Almedalen 2022, where the projects Flex-o-Mat and Live-in Smartgrid organized the seminar "Over-dimensioning the electricity grid or using the electricity grid's infrastructure smarter, the school kitchen shows the way" at the Sustainability Arena.

What are the impacts of changed operating mode and behavioral changes?

The kitchen staff have been given a choice of operating modes to test. The most popular has been to start and stop the different kitchen appliances in sequences. Using the kitchen appliances in sequences is about coordinating and spreading out their power consumption over time. For example, it may involve not starting the dishwasher at the same time as the ovens. The already existing setting "Reduced power" has also been used on the ovens. Ovens are the most power demanding equipment in kitchens as they produce short and high peaks.

The results of the tests are that it helps to reduce the power use when cooking. The behavioural changes have also created awareness and commitment among kitchen staff.
